Tried out the organic, house-smoked pork spare ribs from Green's Market last night.

Braising them gently over a low heat left my abode smelling like a trapper's cabin in the woods, and they were so ferociously salty it was really too difficult to eat them as is. (The salt makes up for the lack of nitrites.)

The powerful smokiness however, turned out to be a virtue. Chopping the meat into a fine mince for sprinkling and rendering down the fat for drizzling, created two ingredients capable of giving a boot kick to any number of food items that can be on the bland side without a little help. In this case, it elevated two plain vegetable dishes of baked pumpkin and roasted cauliflower into something sensational.
